I started with my sugar cookie recipe for the base. And let me just say, if you have those cookie cutters that leave imprints to help frost…don’t imprint them! They are a BILLION times easier to ice if they don’t have those dang indents. Trust me. This is what my cookies look like before frosting.

After icing them, they look like this…The BEST Royal Icing Recipe EVER! - Golden Rippy (4)And because we LOVE BB-8 so much, we made a bunch of them. I wuv him. (forgive my wonky circles, I was icing with one hand while bouncing a baby on my knee).

The BEST Royal Icing Recipe EVER! - Golden Rippy (5)My boys both had birthdays this month, and we had a Star Wars birthday party (like every year, duh). They specifically asked me to make black stormtroopers like in the video game when you reach level 50. And they asked me to make Kylo Ren, Darth Vader and a whole lotta stormtroopers. The galaxy stars were my idea. So was BB-8.

To get the silver effects on Kylo Ren and Darth Vader, I used that silver mist spray from Wilton. (Get it at Walmart). To which I quickly sprayed in my face and said “Witness Me!” (Mad Max reference) lol, which my hubby was barely amused by. Yep, sometimes I’m even too much nerd for him. Hah. But yeah, I made stencils out of freezer paper and sprayed over the black icing once it was totally dry. Wait like 6-8 hours.

BB-8 has orange sugar on it. I outlined white, flooded it, and then did wet-on-wet to add the black outline. After that was dry I outlined white circle on his body and dipped him in decorative sugar. The stormtroopers are we-on-wet. Flooded in white, and quickly added black designs. The BEST Royal Icing Recipe EVER! - Golden Rippy (7)Here’s the recipe to make the icing.

Total Time

15 min

Ingredients

  2. 5 large egg whites (or equivalent)
  3. flavoring to taste (1 tsp lemon extract, or peppermint extract, or cherry extract, etc)

Instructions

  1. Add to bowl, powdered sugar and egg whites. Start on LOW to prevent sugar from flying out, crape down, then mix 1-2 mins on HIGHEST setting. Color changes from grey to very WHITE glue-like consistency. Add flavor now and mix again. Add color after scooping out amount needed to ice, otherwise cover with plastic wrap pressed against icing to prevent "skin" from forming and tightly cover. Will last in fridge for a month (keep away from pungent foods).

And here’s the video I watched to make the galactic stars. Same idea as the video, just switch to a star cookie cutter shape. And my pictures don’t show, but I had a pretty pink in there too. I LOVE watching SweetAmbs. Her videos are so much fun. She’s got a really soft voice. Perfect for her delicate cookies.

If you’re new to flooding, watch this video…

And to get an idea on how to do wet-on-wet watch the filigree video. That’s how I did the stormtroopers, BB-8 and the black stormtroopers.

Happy Baking, my Lovelies! May the Icing be with you. 😉

I prefer to use Crystal Colors edible gold dusts and Sweet Sticks luster dusts when I make gold royal icing. My favorite Crystal Colors are Antique Gold, Old Gold, and Blush Gold and my favorite Sweet Sticks are Glamorous Gold and 24K gold. You can find these dusts on Amazon or at Sugarpaste.com.

Corn syrup helps give shine and also a soft-bite to your icing. Without corn syrup, your royal icing can be as hard as a rock, and no one wants to chip a tooth on a cookie. I use 1 Tablespoon of Karo Light Corn Syrup in my icing recipe. I've seen some cookiers use more but this ratio works well for me.

What is a trick for royal icing? ›

Most of the problems I've encountered with royal icing can be solved by making sure the icing is not over-mixed. The icing should be thick and creamy when it comes off the mixer rather than light and fluffy. I mix my royal icing on medium-low speed for no longer than 5 minutes.

Take care not to beat the icing any longer than is needed to turn it crisp white, and to only beat it at high speed at this very thick consistency. Extended beating, especially of looser icing, can pump a lot of air into it, creating tiny (or not so tiny) bubbles that can be difficult to eradicate once incorporated.

How do you get icing to be shiny? ›

One of the main keys to shiny icing is getting that icing to dry quickly. The faster the icing dries, the shinier it will be. One simple method to faster drying is to just aim a fan at your drying cookies. I like to aim the airflow so that it passes evenly over my cookie sheet, not directly down at a particular cookie.

Don't: Mix Luster Dust Directly Into Buttercream

If you try to mix the luster dust into your buttercream, the sparkle will get lost in the frosting. Sparkle only works as a coating or sheen; it needs to sit on top so the light can hit it in all sorts of glorious ways.
