Ingredients in Liquid Mozzarella

Potato Flakes are so simple in this recipe, giving the cheese its stretchiness and a lot of volume. Regular potatoes can be used but do tend to taste more strongly of potatoes.
Nutritional Yeast adds a lot of cheesy flavor.
Lactic Acid, Lemon Juice, and Vinegar are where this recipe gets its acid tang. Use what you have. Combining all three ingredients gives a complex flavor, but this recipe is still delicious with just lemon juice.
Miso Paste is a fermented Japanese seasoning made from soybeans, salt, and koji. It has a savory, umami flavor with a slightly salty and tangy taste, adding depth and complexity to dishes.
Salt is essential here … since “real” cheese is pretty salty, this needs at least a dash. But use to taste.
Oil is optional here. This recipe is better and more cheese-like with oil, but it’s undoubtedly also delicious without it.

  • 2 cups water (plus more as needed for ease of blending)
  • 1/4 cup mild tasting oil (canola, etc)
  • 2 tablespoons melted coconut oil (can omit)
  • 3 tablespoons tapioca flour
  • 2 tablespoons nutritional yeast
  • 1 tablespoon white miso paste
  • 1 tablespoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon lemon juice
  • 1 teaspoons vinegar
  • 1/4 teaspoon lactic acid
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon white pepper (or black is fine, too)
  • 1 teaspoon salt

Instructions

  1. Place all the ingredients into a high-speed blender and puree until very smooth. Add more water for ease of blending, if needed.
  2. Pour the liquid moz cheese mixture into a heavy-bottomed pan and heat over medium heat until the liquid cheese comes to a gentle simmer. Let simmer gently for 3 to 4 minutes, stirring constantly, until thickened and somewhat glossy and stretchy.
