How To Press Tofu

When you buy tofu it’s packed in water. So, you’re going to want to press it when making baked tofu. But, you can also purchasesuper firm tofuwhich is vacuum-sealed and not packed in water. The super firm is my personal choice for this and other meatier recipes.

The easiest thing to do is buy atofu press. It’s very easy to use and inexpensive. If you don’t have atofu pressit’s still easy to do. All you need to do is wrap your tofu in a clean dish towel or paper towel, set it on acutting boardor plate, set another plate on top, and place something heavy on top. A cast-ironskillet, books, or canned goods work really well.

This is going to get rid of most of the excess water and only takes about15-20 minutes. I also like to set mine in the fridge overnight. But, it’s not necessary.

If you don’t have agrill panyou can very easily bake the tofu.

Preheat your oven to375˚F,line a rimmedbaking sheetwithparchment paper, lay out the tofu in a single layer, and bake for15 minutes. Flip the tofu, brush with more of the marinade, and bake for another 15 minutes.

Mmmm, mmm, I LOVE marinating super firm tofu and this marinade is terrific (For the reader who is concerned with sodium – I am also careful with sodium consumption, so I only used one tablespoon of low sodium tamari sauce and cut the block of tofu into 7 slices. I used one slice in a sandwich with arugula, tomatoes, and a simple dressing on a ciabatta roll. That way I am only getting 1/7 (at most) of the marinade and sodium). This is a great party/entertaining food. You can cut the slices so they fit in a small roll and you have a slider. I just love this recipe. I am going to try baking and then freezing, so all I have to do is a quick turn on the griddle before I serve. YUMMY!!!!

Shane, If I leave out the tamari or soy sauce or aminos and also leave out the maple syrup, I suppose I should not bother, right? Or maybe sub the 2T each with broth? I love soy sauce but I stay away because the sodium makes my ankles swell. Love maple syrup but not in savory foods.

Hi, Marge! Have you ever tried coconut aminos? Very low in sodium. I would try that before the broth.

Yes, just make sure it is regular tofu and not silken. You will also want to press it before using.

I don’t have a grill pan, but agree with you, I love grill marks. Do you think it would work if I let the George foreman get really hot first? I am going to try it unless you have and think it’s a bad idea. It works with my oil free hash browns but have to let them cook for a really long time so they don’t stick.

FAQs

What type of tofu is best for grilling? ›

Tofu comes in a variety of textures, and not all of them can hold up on the grill. For gilling, you'll want to opt for non-silken (or regular), extra-firm tofu. The soft texture of silken tofu is great for adding creaminess to soups and shakes, but it's too soft for the grill.

What is the secret to cooking tofu? ›

Press it. Tofu contains a lot of water, and you'll want to squeeze most of it out, especially if you're baking, grilling, or frying it. I recommend using a tofu press to do this, because it gives the tofu a delicious chewy texture and makes cleanup a breeze. But having one isn't necessary.

What makes tofu taste better? ›

Coat it in garlic, black pepper, salt (plus more of your favourite seasonings), liquid aminos and some olive oil. Then mix it into some cornstarch and toss it all together, then bake for about 20 minutes. Cornstarch also helps to draw out excess moisture so it really gets the tofu crispy.

Should you marinate tofu before cooking? ›

Let the marination magic happen

You should aim to marinate tofu for at least 2 hours in the fridge. To infuse more flavour, you can leave it to marinade for up to 2 days before cooking up.

Is tofu healthier than meat? ›

The high level of protein makes tofu a good alternative to animal-derived meat. Federal dietary guidelines include tofu as part of a healthy vegetarian dietary pattern, and a 2021 American Heart Association scientific statement emphasizes choosing plant-based proteins for heart health.

What happens if you don't press tofu before cooking? ›

Here's the thing: even though tofu might be labeled firm or extra-firm, it contains a lot of water. This excess water can cause the tofu to crumble when you cook it, and it will also have a hard time crisping up. But when you press tofu, you remove the excess moisture.

How do you get seasoning to stick to tofu? ›

Don't dry the tofu: the seasoning will stick much better if your tofu is a little wet on the surface. Don't press it: pressing the tofu makes it dry and rubbery and ruins its texture. We don't want that. Instead, we want fried tofu that is soft, almost silky on the inside, and crispy on the outside.

Why won't my tofu get crispy? ›

The key to crispy tofu is to heat the oil in your pan before adding tofu cubes. Coating the pan-fried tofu in corn flour helps create a crispy coating as the cubed tofu cooks in the oil. Another key to getting uber-crispy tofu is removing excess liquid/moisture from it before you cook tofu.

What not to mix with tofu? ›

What to not serve with tofu? According to studies, a high volume consumption of tofu and spinach together can increase your risk of kidney stones. Tofu and spinach contain calcium and oxalic acid respectively and the combined can form kidney stones.

How to season tofu? ›

Marinate the tofu for at least 30 minutes to infuse it with flavor. Alternatively, you can skip this step and season the tofu right before cooking with a dash of salt and pepper or paprika and chili flakes.

How can I flavor my tofu? ›

In a medium-size bowl place the pressed and cubed tofu. Add the soy sauce and toss to coat. Add in all of the other marinade ingredients (rice wine vinegar, sesame oil, agave, garlic powder, onion powder, black pepper, paprika and water) and toss to thoroughly combine.

Why is restaurant tofu better? ›

This difference in taste is largely due to one key ingredient: salt. In the culinary world, salt is a key flavor enhancer that unlocks and elevates the natural tastes of food. When it comes to tofu, which is naturally quite mild-tasting, salt becomes a critical component in transforming it into something delicious.

What to eat with tofu? ›

What to serve with tofu. These easy tofu meals go well with white rice, toasted bread, or noodles.

What is the best tofu for cooking? ›

Extra-firm tofu: Consider extra-firm tofu the all-purpose tofu that holds its shape well and is excellent for slicing and cubing. It's an ideal choice for pan-frying, stir-frying, baking, grilling, and scrambling.

Do I want firm or soft tofu? ›

Many recipes gravitate toward the reliability of extra-firm tofu, which is easy to manipulate and not likely to fall apart in dishes. But tofu isn't a one-texture-fits-all ingredient. It's a wondrous flavor sponge, and the softer the texture, the better it will take on seasonings.

What is the difference between pressed tofu and soft tofu? ›

Regular tofu is pressed and has a somewhat spongy texture, and comes in several varieties distinguished by how much water is pressed out. Soft tofu has the least amount of water pressed out, while super-firm has a low moisture content and a dense texture.

What kind of tofu is best for meat replacement? ›

As per usual, I highly recommend Super Firm tofu that's vacuum sealed, and doesn't need pressing. You can use Extra Firm, but you'll want to press it and / or bake it longer to dry it out in the oven (I'll explain in more detail below).
